With this delicious Asian recipe, you can enjoy some of the harvests from your survival garden along with your own freshly preserved food. The fried rice is also a way to add some spice to your leftover rice!
Sweet & Sour Chicken
1 tablespoon oil
1/4 cup chopped onion
1 stalk chopped celery
1/2 cup chopped broccoli
1/2 cup sliced mushrooms
1 clove minced garlic
1 cup peach preserves
1/4 cup brown sugar
1/4 cup vinegar
dash of Worcestershire sauce
2 cups cooked chicken, chopped
Place oil in a small saucepan and heat. Saute onions, celery, broccoli, mushrooms, and garlic until al dente- soft but still a bit of a crunch. Add remaining ingredients. Mix thoroughly and heat through, then serve with rice.
Fried Rice
3 tablespoons butter or margerine
2 cups cold, cooked rice
1 egg, beaten
1 stalk green onion, chopped
Dash of soy sauce
Salt and pepper to taste
Melt butter in skillet and add cold rice. Stir fry until rice begins to quit sticking and gets drier. (If rice clumps, use a fork to mash the lumps into smaller pieces.) Push rice to one side and pour in beaten egg. Stir egg until cooked (like scrambled eggs), then mix back into rice. Add the rest of the ingredients and stir well. Enjoy!
