Purslane! It is considered a “weed” by those who value a manicured lawn. However, it is slowly gaining the recognition it deserves as a mild-tasting succulent that packs a powerful Vitamin C and anti-oxidant punch. Some farmers’ markets are beginning to sell it. It is very easy to cultivate but grows as a “weed” without any cultivation from the east coast to the west.
Personally, we enjoy “sassafras tea.” Take the root of a sassafras tree, shave the outer skin layer and boil for a delicious tea. I like chewing the root for the distinctive flavor.
