I dehydrate everything from mushrooms, tomatoes and carrots to cherries and apples. Dehydrate them from FRESH, and make sure they are completely dehydrated. Better to be overdone than not enough!

I built a vacuum chamber from an old 21 quart pressure canner and bought a small vacuum pump at a refrigeration supply store. I use it to “dry can” in mason jars EVERYTHING that I buy in bulk that is already dry, as well as the items I put through my freeze dryer.
