They lied to us—or at the very least, they paid good money to bend the truth. Back in the 1960s, the Sugar Research Foundation quietly funneled cash into Harvard’s hands, urging scientists to publish papers that pointed the finger at fat and cleared sugar’s name. The deception was neat, polished, and buried deep.

From then on, America marched to the low-fat drumbeat. Grocery aisles filled with “fat-free” snacks, “light” yogurts, and “heart-healthy” cereals. Folks tossed egg yolks like contraband. Doctors followed the script. But the promised health revolution never came.
